Dover sole is an oval-shaped flatfish with a smooth, dark brown upper side and a creamy white underside. Both eyes are positioned on the right side of its body, and it has a small, slightly curved mouth. Renowned for its fine texture and delicate, sweet flavour, Dover sole is considered one of the finest flatfish available.

Dover sole is found throughout the coastal waters of the northeast Atlantic, from Norway to North Africa, including around the British Isles. It inhabits sandy and muddy seabeds at depths of up to around 150 metres, often burying itself during the day before emerging at night to feed on marine worms, molluscs, shrimps, and small crabs. The species supports important commercial fisheries around the UK, particularly in the western English Channel and Celtic Sea.
