White monkfish, Anglerfish
White monkfish has a large, flattened head with a wide mouth and sharp inward-facing teeth. The body narrows significantly towards the tail. Unlike black-bellied monkfish, the lining of the body cavity is white. The tail meat is dense, firm, and boneless, with a mild flavour and slightly sweet taste.
A demersal species living close to the seabed on sand, mud, or mixed ground. Found throughout the northeast Atlantic, including the waters off Cornwall. In Cornwall, white monkfish are landed by vessels operating in the western English Channel and Celtic Sea, typically as part of mixed demersal trawl and gill net fisheries.
Sustainability Rating

Status: Stocks in the Celtic Sea and surrounding waters are currently considered stable under quota management, though monkfish are slow-growing and require careful monitoring.

Best Choice: Monkfish landed by Cornish vessels using regulated demersal trawl or gill net methods with effective monitoring and selectivity measures in place.

Avoid: Fish from poorly managed fisheries or where bycatch mitigation and reporting are insufficient.
Culinary Uses

Monkfish tail is prized for its firm, meaty texture and ability to hold its shape when cooked. Ideal for roasting, grilling, or pan-searing.

Often used in stews, curries, and seafood skewers.

Heads and bones are excellent for rich stocks and sauces.
Best Fishing Practices

Caught primarily by demersal trawl and gill net fisheries operating under quota controls.

The use of selective gear and mesh-size regulations helps reduce bycatch.

Accurate species identification and landing data support improved stock management.

Some vessels use acoustic deterrent devices to minimise marine mammal interactions.
Seasonality

Available year-round, with landings dependent on fishing effort and offshore conditions rather than distinct seasonal migrations.
Supporting Local, Sustainable Seafood
White monkfish remains a premium choice when sourced from well-managed Cornish fisheries. By selecting fish landed within quota and using selective methods, buyers support responsible practices that help maintain healthy stocks and protect the long-term future of this popular whitefish.
