Razor Clams (Ensis spp.)

Razorfish, Jackknife clam

Razor clams have long, narrow shells resembling an old-fashioned cut-throat razor, usually measuring between 10–20cm in length. The shell is smooth and fragile with brown, cream, or olive colouring. Inside, the flesh is pale, tender, and slightly sweet with a firm texture.

Razor clams live buried vertically in clean sandy seabeds in shallow coastal waters. In Cornwall, they are found along sheltered sandy beaches and estuaries. They are highly sensitive to water quality and thrive in unpolluted marine environments.
