Cornish sardines are small, silver-scaled fish with a streamlined, torpedo-shaped body and a blue-green back. They typically measure between 15–20cm and travel in large, dense shoals. Their oily flesh is rich in flavour and high in omega-3 fatty acids.
Sardines are a pelagic species found in the northeast Atlantic Ocean. They swim in midwater and are especially common off the south coast of Cornwall. The Cornish sardine fishery operates mainly from ports such as Newlyn, Mevagissey, and Looe, with fishing taking place close to shore, particularly in the autumn and winter months.
Sustainability Rating
Status: The Cornish sardine fishery is considered one of the best-managed and most sustainable fisheries in the UK.
Best Choice: Sardines caught using ring nets by Cornish vessels. This method is highly selective, with minimal bycatch and no damage to the seabed.
Avoid: Sardines caught using non-selective methods in other regions without robust stock assessments or sustainability certifications.
Culinary Uses
Highly versatile – sardines can be grilled, baked, smoked, or preserved in oil.
