Experience the vibrant flavours of Britain’s shores with a new culinary collaboration running throughout the summer at Holborn Dining Room. In partnership with Ollie Bass, Executive Chef of the acclaimed, sustainability-led restaurant Faber, the brasserie unveils a seasonal Seafood Counter devoted to celebrating the very best of locally sourced British coastal ingredients—delivered directly from day boats and trusted producers across the UK’s shores.
Set within the relaxed elegance of Holborn Dining Room, the Seafood Counter offers a front-row seat to this celebration of the sea. A curated selection of Faber-inspired dishes is also available à la carte throughout the restaurant—offering guests an intimate coastal experience, brought to life at Rosewood London.

A perfect collaboration showcasing everything wonderful about our British shoreline Our coastline feeds us with an abundance of the best ingredients in the world, but it’s our responsibility to nurture and care for it as stewards for the next generation. Every flavour & dish on this menu is sourced from local producers, day boats with sustainability and community at its core. WELSH LAVERBREAD BISCUIT
Known as ‘Welsh caviar’, this is a traditional Welsh delicacy made
from seaweed that was abundant to communities along the coast.
It’s an incredibly sustainable source of food and we use Câr-y-Môr,
a community seaweed farm in Pembrokeshire.

OYSTERS; NAKED, CHIVE, PICKLE, CREME FRAICHE DRESSED
AND TORCHED SUSSEX DO’YA
Once the protein for the poor; then found on the platters of
aristocracy’s soirées; the humble oyster is the ocean’s filter and
even captures carbon. Farmed since Roman times on our coast, we
work directly with Maldon oyster farm to deliver
the freshest and plumpest.
CHALKSTREAM TROUT TARTARE, SOY, KETA CAVIAR, NORI
No need for overfished and farmed salmon – trout has all the
flavour and colour its better known cousin lacks. Farmed in
disused mill ponds in Hampshire this is our only farmed fish on the
menu. It’s lovingly farmed in tune with the unique and rare natural
environment that surrounds the farm.
Kit’s Coty Chardonnay 2021
DEVON DIVER SCALLOP CRUDO, SMOKED DASHI, YOGHURT
It takes stern stuff to hand dive for scallops in British waters and we
thank those who are brave enough to do so. Dredging for scallops is
catastrophic to the ecosystem and won’t be found on our menu.
Saicho Darjeeling
SOURDOUGH GLAZED LOBSTER,
RADISH ROSEMARY AND BUTTERMILK SLAW
We couldn’t resist adding one of our favourite summer
ingredients to the menu and Pembrokeshire has the very best
native lobsters. Glazed with our own sourdough glaze used on
our BBQ, this is a classic.
Gusbourne Rosé 2020
WDORSET DEVILLED CRAB,
AGED CHEDDAR BISCUIT
Dorset crab is up there as one of the best in the world and
Portland Shellfish Co. know their stuff. Keeping with the
quintessentially British menu, crab was a must and it wouldn’t be
right to not include Cheddar somewhere on the menu too.
JOHN DORY, SMOKED EEL, BROAD BEAN
Zeus Faber in Latin, our namesake, a common fish in British waters.
It has a unique thumbprint on the side fabled to be from St Peter
having plucked it from the sea of Galilee. Sadly our mascot was
fished to extinction around the Eastern Med: a lesson for all.
West Country Belle Cocktail
BROWN BUTTER MADELEINES AND DARK CHOCOLATE
A dining room classic and a fitting end to a shoreline experience.
With talented pastry chefs in the building we wanted to finish
on a high. We’re pretty sure the madeleine was enjoyed from
Blackpool ballrooms to Brighton pier through the years; a hark
back to seaside resorts of old.
We’ve been invited to host our very ow Chef’s fish counter and tasting menu at The Holborn Dining Room, part of The Rosewood Hotel London.
