Long Ling, True Ling

Ling are long, slender fish with a large head and a single barbel on the lower jaw. They have mottled brown and olive colouring on the back, fading to lighter tones on the sides and a pale belly. Their flesh is firm, white, and lean, similar in texture to cod but slightly denser, making it ideal for a variety of cooking methods.

Ling are found in deep offshore waters across the northeast Atlantic, usually at depths between 100 and 400 metres. They prefer rocky seabeds and ledges, feeding on smaller fish and crustaceans. In Cornwall, ling are caught by local trawlers working in the western English Channel and Celtic Sea, with smaller quantities landed throughout the year.
