Mussels have smooth, oval-shaped shells that are typically dark blue to black in colour, sometimes with lighter streaks. Inside, the flesh is soft and ranges from pale cream to orange depending on diet and season. They are small shellfish that grow in dense clusters, attaching themselves to rocks and ropes using strong byssal threads.

Mussels are found in coastal waters, attaching to rocks, piers, and other hard surfaces in intertidal and shallow subtidal zones. In Cornwall, they are both wild-harvested and farmed using rope-grown methods in sheltered bays and estuaries. Farmed mussels are particularly common and are considered one of the most sustainable seafood options available.
