Our co-founders, Matt and Anthony, have been working in the hospitality sector for decades, honing their skills, learning from mistakes, building reputations and becoming ever more fanatical about what they bring to your plate or fill your glass with.
The twinkle of Faber started with humble beginnings, delivering shellfish, seafood, and cocktails on their bikes during lockdown in east London, borrowing a pub kitchen to cook in. As the demand for our food grew, they borrowed the pub itself and formed a partnership to keep it, ultimately transforming it into an East End Boozer big on fish.
Skip forward a few years and now they have an incredible, passionate team and the first venue fully dedicated to the very best the British shorelines and seas have to offer.
Our inspiration is the Zeus Faber… John Dory, one of many local fish that can be fished sustainably and from our shores and although it has a wonderful Latin come Greek name it also has a very British name, John Dory. It works for us!
Faber is the Latin word for ‘Smith’ – Like a few other Latin occupational names (e.g. Agricola for farmer, Nauta for sailor). Smith being the most common name in English we decided it sits well with our name as we want to be accessible to all and give everyday people the opportunity to be part of our journey and own the business they work in.
Fresh fish for all
What sets us apart is our commitment to working with local fishmongers who run out to the coast each evening to collect day-boat fish and local ingredients. This means that everything on our menu is fresh, sustainably sourced, and supports the local economy.
We believe in creating dishes that are not only delicious but also ethical and responsible.
