Pollack are long, streamlined fish with dark green to brown backs and lighter silvery sides. They have a slightly curved lateral line and a prominent lower jaw. Typically growing between 40–80cm, pollack have firm, white flesh with a flaky texture and a clean, mild flavour.
Pollack are found in coastal waters around rocky reefs, kelp beds, and wrecks. In Cornwall, they are commonly caught close to shore, particularly by small boats using rod-and-line methods. They are widely distributed across the northeast Atlantic, including the English Channel and Celtic Sea.

Status: Pollack stocks are not well documented, but local populations in Cornwall are considered stable when fishing pressure is low and well managed.

Best Choice: Pollack caught by hook and line by Cornish vessels. This method is highly selective and low-impact, resulting in higher-quality fish.
