Common prawn, Palaemon prawn
Prawns are small, slender shellfish with translucent bodies that can appear pink, brown, or grey depending on their environment. They have long antennae and a curved body, with a slightly firm yet tender texture when cooked. Typically growing up to 10cm, their flesh is sweet and delicate.
Prawns are found in shallow coastal waters, particularly around rocky shores, estuaries, and harbours. In Cornwall, they are commonly caught close to shore, especially at night when they are more active. Local fisheries operate from small boats using pots or hand nets in sheltered areas.
Sustainability Rating

Status: Prawn stocks in Cornwall are considered stable, with relatively low fishing pressure due to their small-scale, localised fishery.

Best Choice: Prawns caught by Cornish vessels using pots or hand methods, which are low-impact and highly selective.

Avoid: Prawns from unregulated fisheries or those caught using methods with high bycatch or environmental impact.
Culinary Uses

Prawns are highly versatile and widely used in seafood dishes.

Ideal for grilling, pan-frying, or boiling.

Commonly used in salads, pasta, curries, and seafood platters.

Their sweet flavour pairs well with garlic, lemon, herbs, and spices.
Best Fishing Practices

Cornish prawns are typically caught using pots or hand nets, minimising damage to the seabed and reducing bycatch.

Fishing is small-scale and often seasonal, with minimal environmental impact.

Careful handling and quick processing help maintain quality and freshness.
Seasonality

Available mainly from late spring through to early autumn, when prawns are most active in inshore waters.
Supporting Local, Sustainable Seafood
