Striped red mullet
Red mullet are easily recognised by their vivid pink-red colouring, golden tones, and slender body shape. They have two distinctive chin barbels used to search the seabed for food. Typically growing between 20–40cm, red mullet have delicate yet flavourful flesh with a rich, slightly nutty taste.
Red mullet inhabit sandy, muddy, and gravel seabeds in warmer coastal waters. Around Cornwall, they are found mainly in the English Channel and western approaches, becoming more common in UK waters as sea temperatures rise. They are landed by small inshore vessels and mixed demersal fisheries.
Sustainability Rating

Status: Red mullet stocks around Cornwall are currently considered stable, though monitoring remains important as demand increases.

Best Choice: Red mullet caught by Cornish day boats using hook and line, nets, or selective trawl methods with low environmental impact.

Avoid: Fish from poorly managed fisheries or where bycatch controls are limited.
Culinary Uses

Red mullet is highly regarded for its rich flavour and delicate texture.

Excellent grilled whole, pan-fried, or roasted.

Works particularly well with Mediterranean ingredients such as olive oil, tomatoes, fennel, and herbs.

The bones and heads can also be used for flavourful fish stock.
Best Fishing Practices

Selective fishing methods such as hook-and-line and small-scale netting help minimise bycatch and habitat damage.

Where trawling is used, regulated mesh sizes and fishing controls support sustainability. Improved monitoring helps maintain healthy local stocks.
Seasonality

Most commonly available from late spring through autumn, when warmer waters bring fish closer inshore.
Supporting Local, Sustainable Seafood
Choosing Cornish red mullet supports small-scale fisheries and encourages greater use of sustainable local species. With its excellent flavour and growing availability in UK waters, red mullet is an increasingly popular choice for seasonal seafood menus.
