European flat oyster
Native oysters have rough, irregularly shaped shells with a flatter, rounder appearance compared to Pacific oysters. The outer shell is typically grey or brown with layered ridges, while the inside is smooth and pearly. The flesh is soft and plump, with a distinctive mineral-rich flavour often described as more complex and refined than other oyster species.
Native oysters are found on seabeds in sheltered bays, estuaries, and coastal waters. In Cornwall, they are traditionally associated with areas such as the Fal Estuary, where small-scale fisheries operate. They grow slowly and require clean, well-managed waters, making them particularly sensitive to environmental changes.
Sustainability Rating

Status: Native oyster populations have declined significantly due to historical overfishing, habitat loss, and disease. They are now carefully managed with strict controls in place.

Best Choice: Hand-harvested native oysters from regulated Cornish fisheries during the open season, where stock management and conservation measures are enforced.

Avoid: Native oysters taken outside of the legal season or from unregulated sources.
Culinary Uses

Native oysters are typically served raw to showcase their clean, complex flavour.

Often enjoyed with lemon or a simple dressing.

Can also be lightly grilled or baked for a richer preparation.

Highly regarded in fine dining and traditional seafood menus.
Best Fishing Practices

Harvested by hand or using traditional sail-powered dredging methods in some Cornish fisheries.

Strict seasonal closures protect breeding periods.

Minimum size limits and licensing help manage stock levels.

Ongoing restoration projects aim to rebuild native oyster populations.
Seasonality

Available from September to April, following the traditional oyster season.

Harvesting is restricted outside these months to allow for spawning and stock recovery.
Supporting Local, Sustainable Seafood
Choosing native oysters from Cornish waters supports traditional fishing methods and important conservation efforts. With careful management and seasonal harvesting, native oysters represent both a heritage species and a sustainable choice when sourced responsibly.
