Lusitanian sole
Sand sole is a small flatfish with an oval-shaped body and a light brown upper side marked with darker patches and speckles. Like other sole species, both eyes are located on the right side of the body. Its flesh is white, delicate, and fine-textured, with a mild flavour that makes it popular with chefs seeking a sustainable alternative to more familiar flatfish.
Sand sole is found on sandy and muddy seabeds in shallow coastal waters. Traditionally associated with warmer southern European waters, it has become increasingly common around Cornwall and the southwest coast of the UK. It is typically caught in mixed demersal fisheries operating in the English Channel.
